Elote (Mexican Street Corn)
Preparation Time: 15 minutes
Cook Time: 10 to 15 minutes
Serves: 3 to 4

Ingredients

3 to 4 husks of fresh corn (preferably from the farmers market if you can get it from there)

3 or 4 skewer sticks

1/2 cup of mayonnaise

1/2 to 1 cup of grated Parmesan
-
1 teaspoon of chili pepper mixed with 1 tablespoon of paprika
-
1 to 2 limes
-
1 bunch of cilantro​
Instructions

Heat each corn in the microwave on high for 3 minutes

Using oven mitts (or oven gloves), remove the corn from the microwave

Hold one end of the corn using the oven mitt and cut the other end of the corn using a sharp knife

Next you want to pinch the end of the corn that you were holding with the oven mitt to carefully remove the husk.

Once removed from the husk you can then insert the skewer stick on one end of the corn

Next generously slather the mayonnaise on all sides of the corn using a butter knife

Generously sprinkle Parmesan cheese on all sides of the corn

Then sprinkle chilli/paprika powder on all sides of the corn

Garnish with limes and cilantro
