Greek Yogurt Marinated Chicken Wings

This is another one of those recipes where I get to use up whatever ingredients/leftovers I have in my fridge (including some Greek Yogurt which was probably just a few days away from expiring..lol!)  I was inspired to try out this recipe after visiting www.justalittlebitofbacon.com  Highly recommend visiting their site if you get a chance.  What I put together is a slightly altered version of their Greek Yogurt Chicken Wing recipe which I strongly suggest you check out. This paired very well with the Greek Cilantro dressing/sauce I made, which I have also listed the recipe for.  The wings were so delicious, I loved how they came out and how easy, budget friendly it was.  Hope you can try it out sometime and if you do please post to Facebook/Instagram as I'd love to see how yours came out.

Preparation Time: 3 1/2 hours to up to 24 hours
Cook Time: 15 minutes
Serves: 3 - 4

Ingredients

Chicken Wings Marinade:​

​

  • 1.5 lbs of Chicken Wings

  • 1 cup of Greek Yogurt

  • 1 tablespoon of lime juice (or lemon juice) 

  • 2 cloves of garlic (finely chopped)

  • 1 thumb sized piece of ginger (finely grated)

  • 1/4 cup of fresh chopped cilantro

  • 1 tablespoon of dried oregano

  • 1 tablespoon of dried basil

  • 1 teaspoon of cumin

  • 1/2 teaspoon of garlic powder

  • 1/2 teaspoon of onion powder

  • 1/2 teaspoon chili powder

  • 1/2 teaspoon of paprika

  • Salt/Pepper for taste

Dipping Sauce:

  • 1 cup of fresh chopped cilantro

  • 1/2 cup of Greek Yogurt

  • 2-3 tablespoons of lime juice

  • 1/3 cup of olive oil

  • 1 teaspoon of dried oregano

  • 1 teaspoon of dried basil

  • 1/2 teaspoon of garlic powder

  • 1/2 teaspoon of onion powder

  • 1/2 teaspoon of chili powder

  • 1/2 teaspoon of paprika

  • Salt/Pepper for taste

Instructions

​​Dipping Sauce:

  1. First add olive oil, cilantro and lime juice to a food processor (or blender) and blend for about 30 seconds.

  2. Next add greek yogurt, oregano, basil, garlic powder, onion powder, chili powder, paprika and blend for about another minute.

  3. Add Salt/Pepper for taste.  NOTE:  You may need to add water if the sauce gets too thick.  Likewise you may need to add more yogurt and/or olive oil if it gets too thin.

Chicken Wings:

  1. In a small bowl mix all chicken wing marinate ingredients and then pour into a zip lock bag. 

  2. Next place chicken wings into zip lock bag and toss to coat them well in the marinate.    

  3. Place in the fridge for 3 hours (or up to 24 hrs).

  4. Next take them out of the fridge and place in the air fryer at 390 degrees Fahrenheit for about 10 to 15 minutes.  

  5. After 10 to 15 minutes flip them over and continue to cook them until golden brown on all sides.  NOTE: if you do not have an air fryer you can do this in a pre-heated oven at 380 degrees Fahrenheit.  Just place them onto a baking sheet and cook for about 15 to 20 minutes.  Then flip them over and cook for another 10 to 15 minutes.  Lastly you want to turn on your broiler to high and let them finish cooking under the broiler for about 5 minutes until they are golden brown.  Cooking temperatures and amount of time could vary depending on how powerful your air fryer or oven is so keep a close eye on the wings as they are cooking.

  6. Once the chicken wings are golden brown take them out of the air fryer (or oven) and using a meat thermometer check to make sure that it has an internal temperature of 165 degrees Fahrenheit.  If not then put them back in for another few minutes until desired internal temperature is reached.

  7. Finally add wings to a plate, garnish with cilantro (optional), serve with dipping sauce and Enjoy!
