Keto Asian Beef Salad

I had a bunch of left over mint from my balcony garden that I did not want to go to waste so I used them in an Asian Beef Salad that is 100% Keto.  I was inspired to try this recipe after seeing the "Thai Beef Salad, Nam Tok" video on YouTube.  You can check out Seonyoung Longest YouTube channel (or visit her website at SeonkyoungLongest.com) to see how she made it.  I omitted some of the ingredients (or substituted them with something) either because I did not have what she had listed or I wanted to keep it Keto friendly.  This was so incredibly delicious definitely one of those dishes you can easily make on a week night after a long day at work because it does not necessarily require that many ingredients and comes together very quickly.  Give it a go and let me know how it came out.

Ingredients

  • 1 lb of steak (Skirt Steak, Ribeye, New York Strip, or Sirloin).  I used Ribeye.  (NOTE: if you are vegetarian or vegan you can use either Tofu or Beyond Meat)

  • 2 tablespoons of soy sauce

  • 1-2 tablespoons of neutral oil (i.e. canola oil)

  • 1 teaspoon of pepper

  • 1 teaspoon of salt

  • 1 lemon (or lime)

  • 1 tablespoon of fish sauce

  • 1 tablespoon of low carb sugar (i.e. Stevia or Splenda)

  • 1 teaspoon of dried chili flakes

  • 1 green onion

  • 1/2 cup of fresh cilantro

  • 1 cup of fresh mint

Instructions

  1. Marinate the steak with the soy sauce, salt/pepper and juice of 1 lemon.  Let it sit for about 10 minutes.

  2. While the steak is marinating start chopping the green onion along with roughly chopping the cilantro and picking the fresh mint leaves of the stems.

  3. Add oil to a frying pan on the stove and set it to medium to high heat.

  4. Cook the steak on the frying pan until desired doneness.  For me I cooked it until medium rare (between 130 to 135 degrees Fahrenheit).

  5. Once the steak is has been cooked, leave it to the side for about 5 minutes.

  6. In a large bowl combine the low carb sugar, fish sauce, dried chili flakes, chopped green onion/cilantro and picked mint leaves.

  7. Next slice the steak into thin stripes and add to the bowl.

  8. Finally mix all ingredients in the bowl.

  9. Serve and enjoy!
